17 – Jackfruit Kos

The jackfruit has various levels in its ripeness. At some stages, it is used like a fruit and in others it is used as a vegetable. The mature jackfruit in this recipe is used like a vegetable. The dish is like potatoes and curd. This recipe also uses jackfruit seeds. They have a taste like that of cooked chestnuts.

Makes 3-5 Servings

Cooking + Prep Time: 20 minutes

Ingredients: • Coconut, grated

• Water, as needed

• Small pot of wedged jackfruit

• Salt as needed

Instructions:

1. Clean fibers from jackfruit. Reserve seeds. Crack seeds and peel. Break three to four smaller pieces.

2. Cover and cook jackfruit with soft fleshy parts in a bit of salty water for 10-15 minutes. Water should all evaporate.

3. Grate the coconut. Mix with jackfruit its seeds. 4. Serve. Can be used as main dish or side with rice.
