In a medium pot over medium heat, heat the oil until it shimmers. Add the garlic and cook until fragrant, about 1 minute. Add the whole and crushed tomatoes, cover, and bring to a boil. Reduce the heat and simmer, covered, for 20 minutes, breaking up the tomatoes as they cook. Stir in the salt, pepper, and basil.

Storage: Store in airtight containers in the refrigerator for up to 1 week. To freeze, place in freezer-safe containers for up to 3 months. Defrost in the refrigerator overnight. Reheat individual portions uncovered in the microwave on high for 1 to 2 minutes. Alternatively, reheat the entire batch in a medium pot on the stove top. Bring to a boil then reduce the heat and simmer until heated through, about 10 minutes.

TOBY’S TIP: Like a smooth sauce? Pour the tomato sauce into your blender or use an immersion blender and blend until smooth.
