1. Preheat the oven to 180°C/160°C fan/ 350°F/gas 4 and line a baking tray with parchment paper.

2. Combine all the meatball ingredients together in a bowl. Form the mixture into 12 meatballs and put them on the lined tray. Bake for 10 minutes, then set aside.

3. Place a deep frying pan over a medium–high heat and spray with olive oil.

4. Fry the onion for a few minutes until translucent, then add the garlic, aubergine, carrot and red pepper and fry for a further couple of minutes until softened.

5. Add the tinned tomatoes, tomato purée, balsamic vinegar, stock, sweetener, herbs and paprika and bring to the boil, then reduce the heat, cover the pan and simmer for 25 minutes.

6. Add the meatballs and olives to the pan of sauce and simmer for an additional 15–20 minutes.

7. Season with salt and freshly ground black pepper.

8. Serve with your choice of sides. It’s perfect over rice, pasta or mashed potatoes.
