3 cloves garlic, peeled

2 slices fresh ginger root

Sesame oil, for rubbing

Thick dark soy sauce, fresh sprigs of coriander leaves (cilantro), cucumber slices, crispy fried shallots, to serve

RICE

600 g (3 cups) uncooked rice

2 tablespoons finely chopped garlic

1½ tablespoons finely chopped fresh ginger root

1 tablespoon finely chopped shallots

2 pandanus leaves, tied into a knot

2 teaspoons salt, or to taste
