TO COOK THE CHICKEN
3 Place the marinated chicken in a roasting tin. Pour over any marinade that is left.
4 Put the whole lemon in the cavity of the chicken. Place the carrots, onion, peppercorns and cardamom pods around the chicken and pour in the boiling water. Dice the butter and put knobs of it all over the chicken.
5 Cover the whole roasting tin with a double layer of aluminium foil or a lid. Cook in a preheated oven for 1 hour, checking halfway.
6 When the chicken is completely cooked, take it out of the oven and drain off the juices from the roasting tin and reserve them to use later in the gravy.
