Stem Vegetables

We use the term stem vegetables to describe common vegetables like celery, celeriac, asparagus, and kohlrabi. Celeriac and kohlrabi look to be more root than stem, but the fat, rootlike part is technically a stem. Celery is a valuable, high-fiber, low-calorie food that tastes makes a crunchy raw snack and is cooked into many dishes, such as soups. Celeriac makes a delicious winter soup and is good in a winter salad. The good thing about kohlrabi is that from plot to plate it takes only six to eight weeks. It is delicious when steamed and mashed with butter or eaten raw in a salad. Asparagus takes three or four years to establish, but it then crops for ten to twenty years. The quickest way to get asparagus is to grow it from one-year-old crowns.
