This recipe comes to us from Peru, where it is prepared using rocotos. They are not typically available elsewhere, but red peppers fill in quite nicely.

Makes 4 Servings

Cooking + Prep Time: 50 minutes

Ingredients:

1/2 cup of raisins, dark or golden

1 chopped onion, medium

1 minced garlic clove

2 de-seeded, deveined & chopped chili peppers

3 tbsp. of oil, olive

1 tsp. of cumin, ground

1 tbsp. of paprika, smoked

1 lb. of beef, ground

3/4 cup of broth, beef

1 chopped egg, hard-boiled

1/3 cup of black olives, sliced

1 cup of queso fresco crumbles

4 bell peppers, red
