Scottish Oat & Leek Pilaf with Salmon
Enjoy this very healthy and nutritious Scottish dish; add a bit of lemon juice to give it a tangy taste!
Prep time: 20 minutes
Cook time: 45 minutes
Servings: 4
Ingredients:
4 piece salmon fillets, skinless
2 cups green beans, chopped
1 cup steel-cut oats, rinsed
2 cups milk
2 leeks, chopped
½ lemon
1 teaspoon dried dill
1 tablespoon butter
black pepper and sea salt to taste
more fresh dill for garnish
Directions:
In a deep large pan over medium heat, melt your butter, then sauté the chopped leeks with salt and pepper for about 2-minutes.
Decrease the heat setting, and cover and cook leeks for about 8-minutes or until soft, stirring occasionally. Once leeks are done, stir in the oats.
Stir in the broth and milk, and increase the heat a bit, stirring occasionally.
Once done, decrease the heat to low, and simmer for about 12-minutes or until oats are tender.
Stir in the lemon zest, green beans, and dill into the oat mixture.
Set the salmon fillets on the oat mixture and season with salt and pepper. Simmer for about 10-minutes or until the salmon is opaque and releases white juices.
Immediately remove skillet from heat and allow to stand for about 5-minutes covered.
Evenly divide into portions among serving plates, and serve along with lemon wedges and garnish with more dill.
