Sweet rice pancakes with blueberry compote Makes 16

A classic leftovers dish, which I ate often as a child, this is utterly delicious. I think of it as Scandinavian French toast.

YOU WILL NEED

For the blueberry compote

500g blueberries, fresh or frozen

1 vanilla pod

100g caster sugar

juice from ½ organic orange and 1 tsp of finely grated zest

For the pancakes

600ml cold Christmas Porridge

4–5 tbsp plain flour

2 eggs

1 tbsp caster sugar

finely grated zest of ½ unwaxed lemon

pinch of salt

30g salted butter
