Greengage and elderflower muffins

The inclusion of crème fraîche here helps the muffins to rise and keeps them light and airy. The elderflower flavour is quite subtle so use the highest concentration cordial you can find, as a weakly flavoured one will just result in sweetened greengages – still tasty but you’ll lose the magic of the elderflower-greengage combination. If you’d prefer to omit the ground almonds, simply increase the amount of flour by 50g. These muffins also work well with Victoria plums, summer berries, thinly sliced rhubarb (macerated in a little sugar first) or orange and/or lemon zest. Dark chocolate chips would be an excellent addition too…
