Risotto with Bottarga (Mullet Roe)
It might come as a surprise to find risotto, which is generally considered to be a northern Italian dish, in a book about Sardinia. But Sardinia holds many surprises. One of them is that the area around Oristano and Cabras on the west coast grows quite a bit of rice. So, while not very common, rice and risotto do find a place on the Sardinian table. Of course, they are always combined with native ingredients—in this case, strong-flavored bottarga (mullet roe), which gives the dish richness and makes it truly Sardinian.
Pair this risotto with Karmis, a blend of vermentino and vernaccia. The wine is full bodied and has an almost savory character (from the vernaccia), so it pairs perfectly with the strong and salty bottarga.
