The Little Chef is the name of a chain of “motorway” restaurants in England. It is also the nickname Mark Firth gave to me when I first started working for him at Diner. This is my sandwich. Rebecca’s is the Scuttlebutt, and Elizabeth’s is the Clean Slate. To me, no sandwich menu would be complete without a salty, oily, cured-meat- and-cheese sandwich. This is an Italian-style sandwich featuring the beautiful pink, fat-studded pork product called mortadella.

You don’t really have to make the green olive spread, as an approximation is surely available at the supermarket (unless you live in Ohio or Union City, NJ). But, as with everything, if you make it at home, you have the satisfaction of knowing you’ve done it—and probably done it better. This olive paste is extremely simple; it’s nothing but olives and oil. I recommend making a large batch and leaving it in the refrigerator to use as you like, when you like. Just make sure to cover the top with olive oil to prevent mold or spoilage. The recipe here makes enough for about eight sandwiches and will last, tightly covered in the refrigerator, for up to 1 month.
