I love this recipe because it is so low maintenance. I mean, you virtually ignore it once you get it in the oven. Plan ahead though, because you will need to start preparing two full days before you intend to serve this Cuban staple. This pork cooks slowly in your oven for twenty-four hours, after marinating for another twenty-four hours on top of that. So be forewarned.
This recipe calls for a leg of pork, but pork shoulder works nicely too. Hey, why not make one of each? Have a Pork Fest! (Every Cuban gathering is really a Pork Fest in disguise.)
