2 tablespoons oyster sauce

1 tablespoon nam pla (Thai fish sauce)

1 teaspoon granulated sugar

¼ teaspoon crushed black peppercorns

Pinch of white pepper

½ onion, sliced

65g (2½oz) button mushrooms, quartered

½ red pepper, sliced

2 tablespoons stock (optional)

TO SERVE

Bunch of spring onions, cut into 2.5cm (1 inch) pieces

1 red spur chilli, diagonally sliced
