Risotto al Latte

MILK RISOTTO

4 cups milk

1 teaspoon salt

2 cups Arborio rice

1 1/2 tablespoons unsalted butter

1/2 cup freshly grated Parmesan cheese

Place the milk and salt in a large saucepan and bring to a boil over high heat.

Add the rice, reduce the heat to medium-low, and simmer, stirring occasionally, for approximately 16 minutes, or until the milk has been absorbed and the rice is al dente, or firm to the bite. (If the rice becomes too dry, add more milk to moisten.)

Remove the risotto from the heat and stir in the butter and Parmesan cheese. Serve immediately.
