1 tablespoon canola or coconut oil, plus more for frying

1 pound fresh Chinese egg noodles (lo mein noodles)

½ cup thinly sliced shallot (1 large)

2 cloves garlic, peeled and minced

1 tablespoon prepared red curry paste

1 teaspoon ground turmeric

½ teaspoon mild curry powder

3 cups coconut milk, with ½ cup of the thickest milk set aside

½ pound beef sirloin, cut into ½-inch cubes

1 tablespoon grated palm sugar (light brown sugar can be substituted)

1 stalk lemongrass

2 Makrut lime leaves

1 small sweet potato (about 8 ounces), peeled and cut into ½-inch cubes

3 tablespoons fish sauce

1 tablespoon fresh lime juice

Cilantro leaves, to garnish

Lime wedges, for serving

1 cup chopped pickled mustard greens, for serving (optional)
