TERIYAKI CHICKEN AND PINEAPPLE SKEWERS

I started hosting barbecues with my friends when I was in college. Back then, we would pool our money and buy cheap cuts of meat, fruits, and veggies to throw on the fire. We’d grill, eat, swim in the apartment complex pool, dry off, and eat some more. When I think about it, those simpler days were the best ones, in which all that mattered was food and friends (and perhaps a nice tan!).

This is a twist on a simple chicken skewer we made so many years ago; I’ve given it a Hawaiian flavor by alternating chunks of pineapple with the teriyaki-marinated chicken on the skewers.

SERVES 6

1 tablespoon extra-light olive oil

3 cloves garlic, crushed

¾ teaspoon peeled and crushed fresh ginger

½ cup soy sauce

¼ cup apple cider vinegar

½ cup brown sugar

¼ teaspoon freshly ground black pepper

1 tablespoon cornstarch

1 tablespoon water

12 boneless, skinless chicken thighs, cut into chunks

Kosher salt

1 pineapple, peeled and cut into 1-inch cubes
