Chicken Salad
9 cups water
7 boneless chicken breasts
1/2 medium yellow onion, diced
1/2 carrot stick, diced
1/2 celery stalk, diced
1 cup lemon nonfat yogurt
1/4 cup mayonnaise
1/4 cup green onion, diced
1/8 cup celery, diced
1/2 cup red grapes, cut in half
1/8 cup almonds
1 teaspoon Mrs. Dash
1/2 teaspoon salt
Bring the water to a boil. Add diced yellow onion, diced carrot, diced celery stalk, and boneless chicken breasts. Boil until fully cooked. Remove the chicken from the water and cool with ice.
Mix all the remaining unused ingredients in a large bowl. Chop the chicken into small pieces and mix together. Serve on a bed of lettuce, as sandwich filler or over a sliced tomato.
