Celery and Egg Salad

1 serving

½ celery stalk, roughly chopped

Salt, for sprinkling

1 hard-boiled egg

1 Tbsp mayo

½ tsp karashi mustard or English mustard

Salt and pepper, to taste

1. Sprinkle the celery with a little salt. When the celery has softened, squeeze it tightly to eliminate excess moisture.

2. Mash up the egg with a fork, and mix with the celery. Add the mayo, mustard, and salt and pepper and mix well.

* Try adding ume paste or a chopped up umeboshi plum instead of the mustard.
