Cauliflower-stuffed Indian Flatbreads

2 cups (8 oz/250 g) whole wheat (atta) flour

½ teaspoon salt 1 tablespoon butter or oil

¾ cup (200 ml) plus

2 tablespoons water

Oil or ghee for shallow frying

Filling

1¼ cups (8 oz/250 g) cauliflower, grated

2 teaspoons lemon juice

½ teaspoon salt

4 tablespoons finely chopped fresh coriander leaves (cilantro)

1 medium onion, finely chopped

1 green finger-length chili, finely sliced

1 teaspoon finely minced fresh ginger root

1 Sift the flour and salt into a large basin and rub in the butter with your fingertips. Bring the flour together with the water to make a soft, pliable dough. Knead until the dough is smooth and elastic, then cover and leave to rest for 30 minutes.

2 To make the Filling, put the grated cauliflower into a bowl and add enough hot water to cover. Cover and set aside for 5 minutes. Drain in a sieve, pressing with a spoon to extract as much liquid as possible.

3 In a mixing bowl, combine the cauliflower, lemon juice, salt, coriander leaves, onion, chili and ginger. Stir thoroughly and divide into 6 portions.

4 To assemble, knead the dough again and divide into 6 portions. Roll each portion into a ball, then using thumb and fingers, press the ball into a large bowl shape about 2 ½ in (6 cm) across. Place a portion of the Filling into each dough bowl, then pinch the edges close. Try not to get the edges wet or they will be impossible to close. Shape into a ball again.

5 On a floured board, gently roll out the ball into a disc 5 in (13 cm) in diameter and ¼ in (¾ cm) thick.

6 Shallow fry the disc on a hot griddle until both sides are golden brown in color. Serve with any of the various chutneys (pages 14–15)

Atta flour is a form of whole wheat flour. It is made from durum wheat that is ground very fine, with some of the bran included. Breads made from atta flour include chapati and roti.
