Ingredients

¼ cup (30g) fennel slices, including fronds

¼ cup (30g) packed arugula (rocket) leaves

¾oz (20ml) fresh lime juice

¾oz (20ml) simple sugar syrup (see page 7)

2oz (60ml) gin

Add a pinch of the fennel fronds, sliced fennel, arugula leaves, lime juice, and simple sugar syrup to a cocktail shaker and muddle until the fennel is bruised. Add the gin and top with ice. Shake vigorously, then double-strain into a chilled martini glass and serve.
