Salad

17.6 oz (500 g) spiral or bow-tie pasta, dry

1 medium (212 g) head of broccoli, florets only and chopped small

1 pint (255 g) (2 ½ cups) cherry tomatoes, halved

1 medium (155 g) red bell pepper, diced small

½ medium (114 g) red onion, thinly sliced in half moons

Scant ½ cup (60 g) pitted Kalamata olives, minced (see note)

Dressing

¾ cup (180 ml) olive oil

¼ cup (60 ml) apple cider vinegar

2 large garlic cloves, minced

2 tbsp (30 ml) water

1 tbsp (15 g) vegan granulated sugar

1 ½ tsp (7 g) table salt

¼ tsp ground black pepper

¼ tsp onion powder
