Gammon, Egg and Chips
A timeless pub favourite, a simple plate of gammon, egg and chips will always get my vote. Some multi-tasking is involved here, but worth the effort once your plate is in front of you. I like to use duck eggs because they boast a rich, creamy yolk. Uncomplicated pub food at its best.
Serves 2
2 large potatoes (500g), cut into wedges
3 tbsp olive oil
2 gammon steaks
2 tsp wholegrain mustard
3 tbsp butter
150g frozen peas
1 tbsp finely chopped mint
2 free-range duck eggs
Salt and freshly ground pepper
