Pizza makers use all kinds of methods to apply sauce to a pizza. Some, like Jonathan Goldsmith (top right) of Spacca Napoli in Chicago, use small spoons; others, like the original De Lorenzo’s Tomato Pies in Trenton, New Jersey (top left), or J&V Pizzeria in Brooklyn (bottom right), use ladles. Some, like L&B Spumoni Gardens in Brooklyn (bottom left), use wooden spoons that help to smooth the sauce on large pies.
