Hood Canal Crab Cakes with Honey-Yogurt Salsa
This recipe comes from good friends Doug and Sue Ethridge, who serve these spicy cakes family style at the table, along with the honey-yogurt salsa and a big salad for accompaniment.
½ cup chunky hot salsa
½ cup nonfat yogurt or nonfat sour cream
1½ teaspoons honey
1½ pounds (4½ cups) fresh Dungeness crabmeat, picked over for shells and cartilage
½ cup stemmed, seeded, and diced red bell pepper
½ cup diced yellow onion
½ cup cream cheese, softened
½ cup mayonnaise
½ teaspoon minced jalapeño pepper, or 1 tablespoon diced canned green chiles, well drained
1 teaspoon white or dark Worcestershire sauce
1 tablespoon minced garlic chives, or 1 clove garlic, minced
1 tablespoon minced cilantro
1 to 2 cups Italian-style bread crumbs
