Potato & Vegetable Stew

Makes 6 to 8 servings

2 c. chicken broth

1 potato, peeled and diced

1/4 onion, chopped

14-1/2 oz. can diced tomatoes, drained

15-1/4 oz. can corn, drained

15-1/4 oz. can lima beans, drained

1/2 t. pepper

1/4 c. instant mashed potato flakes

In a large pot, heat chicken broth over medium heat to boiling. Add potato; bring back to a boil and cook for 5 minutes. Add onion, tomatoes, corn, beans and pepper. Bring to a low boil. Cover and cook for 20 minutes. Stir in potato flakes until mixed.
