Artichoke Tuna Melt

This is no ordinary tuna sandwich! It’s topped with tasty, healthy ingredients, perfect for sharing at get-togethers. It’s my favorite sandwich…I predict it will become yours too.

Makes 6 servings

1 loaf French bread, halved

1 T. olive oil

1 clove garlic, halved

3/4 c. mayonnaise

1 T. lemon juice

1 T. Dijon mustard

1/2 t. garlic powder

1/2 t. pepper

2 10-oz. cans white tuna packed in water, drained and flaked

14-oz. can artichoke hearts, drained, rinsed and chopped

1 c. fresh baby spinach

2 plum tomatoes, sliced

1 c. shredded mozzarella cheese
