VEGAN DINNER BOWL
PLANTAIN BEANBURGER
We’ve added a Caribbean twist to this delicious burger, made from smashed black beans and plantain. Make sure you use ripe plantain – with black skin – and mash up di ting! Seasoned up, it’s then formed into a juicy plant-based burger to put on the grill. Bring da’ flava to your vegan life!
SERVES 4
2 tbsp coconut oil or olive oil
1 medium onion, chopped
2 ripe plantain (choose ones with black spots), peeled
1 x 400g can black beans, drained
1 tsp salt
1 tsp freshly ground black pepper
1 scotch bonnet pepper, deseeded and finely diced
1 tsp dried thyme
2 tbsp finely chopped parsley
1 tsp paprika
2 garlic cloves, finely chopped or grated
250g porridge oats or plain flour
1 tbsp lime juice
TO ASSEMBLE
4 x burger buns (vegan-friendly, if you like), to serve
Shredded iceberg lettuce
Sliced tomato
Sliced avocado
Sweet chilli sauce
Heat 1 tbsp of the oil in a small pan over a medium heat, add the onion and cook for 10 minutes until soft and caramelised, then set aside.
If you have a food processor, great! Put in all the burger ingredients, including the caramelised onion, and whizz up to combine.
If not, no problem mon. Just grab a mixing bowl and mash down the plantain; if you have slightly firmer plantain, you can boil them down to soften and make the mashing process easier. Add the black beans to the bowl and mash with the plantain, then add some flava with the salt, black pepper, scotch bonnet, thyme, parsley, paprika, garlic and your softened onions. Add the oats or flour, then sprinkle in the lime juice. Mix everything together until it forms a sticky, thick mixture.
Divide the mixture into 4 and form each into a burger shape. Place in the fridge for an hour to set and help secure the shape.
When ready to cook, heat the remaining oil in a griddle pan or skillet (or just use a frying pan) and place over a medium–high heat. Once hot, place the burgers in the pan and cook for 7 minutes, then flip over and cook for 5 minutes on the other side until golden brown and cooked through.
Create a burger in a bun, with fillings of your choice! YA MON! Enjoy.
