One Pan Wonders: Sheet Pan Supper Recipes That Require Little Effort and Taste Fantastic by Joseph Martinez

Roasted Chicken with Butternut Squash

Ingredients:

1 3 lb. chicken

3 T oil

¾ tsp. salt

¼ tsp. pepper

1 butternut squash, peeled and cut

1 tsp. dried sage

3 T water

Directions:

Heat the oven to 450 degrees and coat the chicken with seasoning and the oil

Arrange the chicken onto a baking sheet

Toss the cubed squash with the same seasonings and oil and add the squash to the pan next to the chicken pieces

Cook about 20 minutes and pull pan out and spoon or pour the juices or grease into a side pan or grease cup and return the pan to the oven

Bake until the chicken is cooked thoroughly and the squash is cooked; this should take another 10 - 15 minutes

Pour the remaining fat and juices from the pan into a saucepan, bring the juices to a boil, let it dissolve down to 2 T and drizzle that over your chicken for added flavor
