Egg White Omelet
A healthy, easy to make weekday breakfast.
Serves: 1 - 2
Time: 30 mins.
Ingredients:
• egg (4, whites)
• water (2 tablespoons)
• red onion (1/4 cup, diced)
• baby spinach leaves (1 cup, chopped)
• olive oil (1 teaspoon)
• salt (to taste)
• black pepper (to taste)
Directions:
Set your nonstick skillet with oil on medium heat. Add in your spinach and onion then sauté until the onion is soft and the spinach is wilted, about 5 minutes. Remove from the pan and set aside.
Whisk the eggs together with the water and season with salt and pepper.
Add the eggs to the pan and cook until just starting to set, then sprinkle with the spinach mixture.
Cook undisturbed until egg is set, then flip half the Omelet over and cook for a further minute to set.
Slide onto a plate and serve immediately.
