Instructions:
1. Mix the peanut butter, oil and soy sauce together in medium sized bowl until creamy and blended well.
2. Add and stir salt, pepper, red chili powder, garlic, sesame seeds and spring onion. Add pork. Turn and coat with marinade.
3. Marinate the pork in fridge for two to four hours.
4. Preheat the oven to 400F. Line baking sheet using foil.
5. Thread the zucchini, bell pepper, mushrooms, onions and pork onto your skewers. Transfer to baking sheet and pour more marinade on the top.
6. Bake until the pork is browned and tender, about 1/2 hour. Serve.
