Instructions:

Preheat oven to 350F. Grease two 9” x 5” loaf pans.

In large-sized mixing bowl, stir flours, baking soda, brown sugar & kosher salt together. Add butter milk. Stir till wet mixture absorbs dry.

Evenly divide mixture into the loaf pans prepared above. Bake in 350F oven for an hour. When you insert a knife in crown of loaf, it should come back clean. Serve while warm.

15 – New Brunswick Poultry Stew

This tasty stew is made with a broth base with vegetables and tapioca. Early New Brunswick stews often were made using poultry, and the one features Cornish game hens.

Makes 4 Servings

Cooking + Prep Time: 20 Minutes + 8 Hours Slow Cooker Time

Ingredients:

1 chopped, large onion, uncooked

3/4 lb. of quartered, uncooked potatoes, new

4 oz. of baby carrots, uncooked

1 tsp. of tapioca, uncooked

2 whole Cornish game hens, skinless, halved, frozen, uncooked

1 cup of chicken broth, reduced sodium, fat-free

1/2 tbsp. of parsley, dried

1/2 tsp. of rosemary, dried

1/2 tsp. of thyme, dried

4 minced, medium cloves of garlic
