This all spicy, mouthwatering, sugar-free dish is a keeper. It is a mixture of shrimps, veggies and rice, not forgetting the Cajun seasoning, all in one pot, and that means less cleaning. It’s easy to prepare and its ready to serve in no time.

It all starts by sautéing the onions and celery then the other spices and vegetables, to give this dish a deep aroma and taste, the rice and broth are left to cook for a while before stirring in the shrimps. Diced pieces of sausage can be made an additional ingredient. This simple but delicious meal, is well balanced and richly nutritious. Squeezing the lemon over the meal gives it a beautiful bitter balance and taste. Due to its spicy nature, salt may not be necessary, but you can always add some if need be. It’s best served while hot.

1-pound shrimp, peeled and deveined

1 cup white rice

1 onion, chopped

2 cups vegetable broth

2 cloves garlic, ground

1 tablespoon olive oil

2 stalks celery, diced

1 green pepper, seeded and finely chopped

2 teaspoons paprika

1 tablespoon lemon juice

¼ teaspoons cayenne pepper

½ teaspoons dried thyme

½ teaspoons dried oregano

1 tablespoon butter

¼ teaspoons crushed red pepper flakes
