INGREDIENTS

LEMON SYRUP:

2 cups sugar

3 strips lemon peel

Juice of ½ lemon

SWEET FRITTERS:

1 cup expeller pressed corn oil,

plus extra for frying

2¼ cups unbleached, all-

purpose flour

1 tablespoon sugar

½ teaspoon salt

2 egg yolks

1 teaspoon vanilla extract

Preparation:

Make the syrup by combining sugar, lemon peel, lemon juice, and ¾ cup of water in a medium saucepan. Stirring slowly, bring to a boil over medium heat. Once mixture comes to a boil and sugar is dissolved, stop stirring and reduce heat to low. Simmer for 10 minutes and then remove from heat and set aside to cool. Discard lemon peel and set aside. (This can be done up to 1 month in advance; cover and store in the refrigerator.)
