450 g (1 lb) Shortcrust or Puff Pastry

For the Beef

6 × 225 g (8 oz) small chuck steak joints, trimmed of all sinews and tied

Cooking oil

1 onion, roughly chopped

1 carrot, roughly chopped

½ leek, roughly chopped

2 celery sticks, roughly chopped

1 small garlic clove

Sprig of thyme

1 bay leaf

Bottle of red wine, preferably claret

900 ml–1.2 litres (1½–2 pints) Veal or Beef Jus, not too thick and strong; the flavour will develop while braising

Butter

Salt and pepper

3–4 tomatoes, chopped (optional)
