Couscous with Arugula, Olives & Raisins

Couscous sounds foreign and exotic, but it’s basically tiny grains of wheat pasta. It’s good for you (when it’s whole wheat) and it cooks in about 10 minutes without requiring attention. It’s about as low-maintenance as you can get, and it has a nice nutty flavor and a soft, light, and chewy texture. This dish adds some flavor and color with wonderful, peppery arugula, sweet raisins, and sour olives.

Flavors: Sweet, salty, sour, spicy, rich

Equipment: A small bowl, a medium bowl, a large bowl, a pot with a tight-fitting lid capable of holding 4 cups liquid, a whisk (a fork will do), and tongs

Note: On the proportions of couscous to water: be careful to read any instructions on the couscous you buy if you buy it prepackaged. The amount of water required varies depending on the nature of the couscous. For couscous that does not come with directions, start with 1 1/2 cups of water and then 1/4 cup at a time until you have the texture you like.
