Shropshire Blue and Fig Scones

Shropshire Blue cheese has an orange colour, from annatto, a natural colouring; if you can’t find Shropshire Blue, Stilton has a similarly tangy flavour.

500g self-raising flour

2 tsp baking powder

125g butter, cubed

60g Shropshire Blue cheese, crumbled

120g Cheddar cheese, grated

2 dried figs, chopped

Approx. 150ml milk

Preheat the oven to 190˚C. Line a baking sheet with greaseproof paper.

Sift the flour and baking powder into a mixing bowl and, using your fingertips, rub in the butter until the mixture resembles fine crumbs. Add the Shropshire Blue, 60g of the Cheddar and the figs and stir to combine.

Add enough milk to make a soft dough.

Turn out onto a floured surface and roll out to about 3cm thick. Stamp out using a 7cm round cutter. Place on the baking sheet and sprinkle with a little grated Cheddar.

Bake for 12–18 minutes until risen and golden brown.
