My childhood summers were all about this charred bird served next to cold iceberg salad loaded with cucumbers (this page). My mom would spatchcock the quail and soak them in paprika-and-onion-spiked wine. I’ve added more aromatics and a splash of soy for an even richer marinade. If you’ve never had quail, you have to try it. It’s like chicken’s sexy, chic cousin—way more savory and juicy, but not as intense as other game. Once it’s rested off the grill, just go at it with your hands, gnawing the meat off the bones. There’s no other way.
