13. Vanilla and Chocolate Maicena Pudding
This Dominican sweet treat was inspired by a breakfast dish that is popular with children. This spin on it makes it ideal as a dessert/comfort food.
Serves 6
Ingredients
6 C. milk
1 ½ C. sugar
½ C. cornstarch
½ C. toasted coconut flakes
½ tsp salt
2 Vanilla bean pod seeds (alternatively use ½ C unsweetened cocoa powder)
Preparation
Add the salt, sugar and milk then mix. Next add the cornstarch and mix.
Add the vanilla bean seeds.
Strain to remove any solids then add the contents to a saucepan on a medium heat. Stir constantly to prevent sticking, then lower the heat as the liquid starts to boil. Keep stirring until the mixture becomes the consistency of condensed milk.
Turn off the heat for the pan and pour the contents into a bowl. Keep stirring until cooled.
Serve in small cups with toasted coconut sprinkled on top. Chill in the fridge before eating.
