squid and tomato salad with crispy capers
In the height of the tomato season, we use a mixture of red, yellow and green tomatoes. Though this is not essential, the flavour is everything. The squid is sliced super-thin, so it cooks in a matter of seconds when flashed in a hot pan. Salty, crispy capers add a delicate crunch and finish the dish well. Serves 4
6 tablespoons sunflower oil
3 tablespoons capers in brine, washed and squeezed dry
400g sweet cherry tomatoes, quartered
1 spring onion, finely sliced
1 teaspoon fresh oregano or marjoram or pinch dried
6 tablespoons extra virgin olive oil + extra for drizzling
2 tablespoons good-quality aged sweet red wine vinegar like cabernet sauvignon (page 303)
300g cleaned small to medium squid, sliced into thin strips 8cm x 0.5cm
3 tablespoons roughly chopped parsley
