2 oz. shortening

1 large egg

2 oz. milk

¼ oz. vanilla extract

¼ oz. baking soda

¼ oz. ground cinnamon

8 oz. unsulfured molasses

48 oz. all-purpose flour

1 beaten egg

Instructions:

1. Preheat the oven to 350 degrees Fahrenheit. Coat cookie sheet with cooking spray or line with parchment paper

2. Cream brown sugar and shortening together in large bowl with an electric mixer until smooth.

3. Mix egg, milk and vanilla into the brown sugar mixture until fully incorporated. Stir in cinnamon, baking soda and molasses. Slowly add flour until dough is stiff.

4. Lightly dust a flat surface with flour and roll dough out to ¼” thick. Cut cookies in pig shapes with a cookie cutter and transfer to cookie sheet. Leave 2” of space in between each cookie. Brush the beaten egg wash over the top of the cookies.

5. Bake for 15 minutes until edges are lightly browned.
