CHOCOLATE

In a medium heatproof bowl place 30g (1 oz) cocoa powder, 160g (51/2 oz) chopped dark chocolate and 40g (11/2 oz) date syrup. Heat 140g (41/2 oz) unsalted butter until melted and bubbling and pour over the chocolate mixture. Stand for 5 minutes and then stir. Some lumps may remain but it doesn’t matter. Cool for 30–60 minutes before spreading over the dough. It should be spreadable but not runny. If it sets before you use it, place the bowl over a pan of gently simmering water and stir.
