1 medium-sized onion, diced

1 well-chopped fennel bulb

1 teaspoon of salt

fresh ground black pepper

cloves of minced garlic

2 big peeled and well diced waxy potatoes

2 cups of vegetable stock

1 can (14-ounce) of coconut milk

3 pounds of already prepared mussels

½ cup of basil leaves, shredded

Instructions

Heat your oil in a pan, add the onions, fennel, and a little salt, sauté for about 5 minutes until tender.

Then add your garlic and potatoes, cook for another few minutes, pour your stock and let it boil.

Fold in your coconut milk, reduce the heat and simmer for 10 minutes or till the potatoes cook through.

Stir in your mussels and cook for an extra few minutes or until your mussels open.

Throw out any closed mussel, add your basil, a bit of salt and pepper to taste, and serve.
