Rice Topped with Braised Minced Pork

Minced pork with various spicy seasonings is often added as a topping to rice and noodle dishes in Taiwanese cuisine. They are usually eaten as a quick and simple lunch, or mid-afternoon snack.

2 tablespoons oil

1 tablespoon finely minced garlic

1 tablespoon finely minced spring onion

600 g (1¼ lbs) minced pork

1 pickled cucumber (purchased, see note), finely minced

½ teaspoon five spice powder

½ teaspoon salt

3 tablespoons soy sauce

1 tablespoon rock sugar (see note)

1 tablespoon rice wine

5¼ cups (1.25 liters) water

4 individual serving bowls of cooked rice

Sprigs of coriander leaves, to garnish

1 Heat the oil in a wok until smoking hot, add the minced garlic and spring onion. Stir-fry for 30 seconds, then add the minced pork and continue to stir-fry for another 2 minutes. Add the minced pickled cucumber, stir to mix, then add the five spice powder, salt, soy sauce, rock sugar and wine, stir to mix well. Slowly stir in the water. Bring to a boil, cover with a lid, lower the heat and simmer for 1 hour.

2 When done, spoon the pork and sauce on top of the individual bowls of rice. Garnish with sprigs of coriander leaves before serving. Extra sauce may be kept in the refrigerator and re-heated when needed.

Pickled cucumbers is sold in jars or cans in well-stocked supermarkets. The cucumbers are harvested when they are no larger than 2.5 cm (1 in) length, as this is when they are the most tender and juicy. They are cleaned, cut, salted, washed again, dried, cooked, and seasoned and undergo a natural fermentation process before being bottled, sterilized, and hygienically sealed.

Rock sugar is made from sugarcane and maintains the original flavor and fragrance of the cane, which is raw sweet in comparison to the processed white sugar. It has a light brown color and is quite brittle and easily melted when heated. Light brown sugar can be substituted.
