When celiac disease is first diagnosed and you begin making dietary changes, you may also need to take vitamin and mineral supplements recommended by your doctor or dietitian to help correct nutritional deficiencies. Common deficiencies include calcium, vitamin D, vitamin B-12, iron, folate and zinc. As your symptoms subside and your ability to absorb nutrients improves, the need for supplements may diminish. If you have osteoporosis, you may need to continue taking calcium and vitamin D supplements long term.

Within just a few weeks of removing gluten from your diet, the inflammation in your small intestine will likely begin to subside. But it can take from several months to two to three years for your intestine to heal completely.

Getting used to your new diet can be difficult. It may take months to sort out which foods you can or can’t eat. You may crave certain foods that you’re no longer allowed to eat. But don’t get discouraged and give up. With time, most people learn to adjust to a gluten-free diet, and it becomes a normal part of daily life.
