CHINESE PORK AND GINGER DUMPLINGS
Certain ingredients have the power to change the way I think about cooking. Yuzu juice is one of these ingredients and I just can’t get enough of the stuff. A yuzu looks like a small grapefruit with a flavour and smell somewhere between a mandarin and a lime. We sell it in the deli but you can also get it online and from specialist Asian food stores. I’ve got no doubt it will be in supermarkets soon. Yuzu juice goes brilliantly with Chinese dumplings. I’ve used pork but you can use chicken instead, or fish such as crab or salmon.
