Instructions:
1. Rinse the beans. Soak them in large pot with filtered water overnight.
2. In large skillet, heat the oil on med. heat. Cook the onions, garlic, celery and bell peppers in oil for three to four minutes.
3. Rinse the beans. Transfer to large-sized pot with six cups of water. Stir in the cooked vegetables. Season using parsley, Cajun seasoning, sage, thyme, cayenne pepper and bay leaves. Bring to boil. Reduce heat level to med-low and simmer for 2 1/2 hours.
4. Stir the sausage into bean mixture. Continue simmering for 1/2 hour.
5. Bring filtered water and rice to boil. Reduce the heat level and cover. Simmer for 18-20 minutes. Serve the beans over rice.
