Kofta Sauce

Preparation: You will need North Indian Base Sauce (page 22) and a batch of koftas

Speed: About 30 minutes

Notes: This sauce can be used for Split Pea Koftas (page 85), Red Cabbage Koftas (page 119), or Lotus Root Koftas (page 110).

1 tablespoon oil

1 tablespoon coconut oil

1 medium onion, finely chopped

1 teaspoon cumin seeds

3 whole cloves

3 cardamom pods

1 small stick cinnamon

2 cups North Indian Base Sauce (page 22)

1 teaspoon garam masala

1 tablespoon fresh cilantro, chopped
