Shrimp with Farro and White Beans
SHRIMP WITH FARRO
AND WHITE BEANS
There are so many cool grains out there that there’s no reason to get stuck on the potato, pasta, rice merry-go-round. Step off the carousel. Farro is grain-tastic and one of the healthier kinds out there—chewy and a little crunchy.
Makes 6 to 8 servings
1 cup farro, cooked in broth or salted water, until just right (about 15 minutes)
1 cup large white beans, the bigger the better
½ cup olive oil
2 lemons, juiced
1 garlic clove, grated
Lots of fresh herbs, such as parsley, dill, or cilantro
1 small Persian cucumber, chopped fine
2 stalks celery, chopped fine
1 small shallot, chopped fine
2 cups arugula
½ cup chopped cherry tomatoes
1 pound peeled raw shrimp
2 teaspoons salt
A little olive oil
3 tablespoons dill butter: 3 tablespoons butter, combined with chopped dill and garlic
