TIP:
■Tastes best prepared at least one day before the party.
■White potatoes (or other medium- to low-starch potatoes) are a fine substitute. Usually done in around ten minutes after boiling. Start checking for doneness after seven or eight minutes.
■If preparing a day or two ahead, be sure to taste salad (before garnishing) and add salt and mayonnaise if needed.
SERVING SUGGESTION:
